Roasted Almonds with Sea Salt

Looking for a healthy snack? You can roast almonds in a cookie sheet in your oven at home. The health benefits of almonds are pretty well-known. They are high in fiber, vitamin E, minerals, and “good” fat (the kind that actually helps lower cholesterol). If you’re eager to get to the recipe you can scroll to the bottom of this post.
I buy organic raw almonds in bulk and roast them with olive oil and sea salt in small batches. They can be kept in an airtight container for up to a month, and maybe longer, but they never last longer than a week or so in our house. They are exceptionally flavorful when they are still toasty warm, just a minute or so out of the oven.
RECIPE:
Roasted Almonds with Sea Salt

Preheat oven to 300 degrees.
Cover bottom of cookie sheet or shallow pan with a single layer of almonds. It is OK for them to touch but you don’t want them so crowded that they are on top of each other.
Drizzle almonds with just a little olive oil, roughly 1 teaspoon, then stir them around in the pan until they are shiny. You can use less oil if you like, but I find the oil gives some “teeth” for the salt to stick to. Salt almonds sparingly. It is easier to add salt later but you can’t un-salt.
Place cookie sheet in oven and roast almonds for approximately 30 minutes. When they start to crackle and snap and are browned to your liking, remove from oven and let rest on the cookie sheet, uncovered, until cool.
When almonds are completely cool, transfer to an airtight jar or whatever container you like. Serve by the handful.
